Hokkaido Pumpkin Carpaccio
Wash the pumpkin, cut it in half, and remove the seeds.
Then cut it into thin slices or shave it.
(If you prefer a slightly softer texture, blanch the slices briefly.)
Toss the pumpkin in a little olive oil,
season lightly with salt, and drizzle with
hazelnut crema to taste.
Arrange the marinated pumpkin on a platter and
garnish with toasted pumpkin seeds.
My tip:
A bit of arugula in the center and pink
pepper berries also look great on
this appetizer.
